Recipes I've Shared:

Nana's Chili

My mother's chili recipe. This is a crockpot recipe but can also be made on the stovetop with satisfactory results. This is a sweeter chili, and I usually nix the chili powder altogether, however if you like it spicier add chiles and lots of chili powder.

Turkey Burgers on a Budget

This is another recipe variation from a recipe on Spark. I used 93/7 ground turkey at $7.18 for 3 lbs because to buy 3 lbs of 15% lean ground beef was close to $12. Ouch!!! I also added approximately 1/4 Italian bread crumbs just to help the burger stay together. I really did get 8 burgers out of the mixture that fit the buns perfectly. My daughter asked what the black things were before I cooked them and I fibbed and told her it was seasoning because I was afraid my picky eaters would balk if they knew it was actually beans. I was pleasantly surprised when both my daughter and my guy said "these are definitely a keeper". Thank you to "Hopetobefitchic" for the original recipe. **I did add 1/2 slice of cheese per burger so if you dont eat that then your cals are even less.

Oats n Eggs

Chicken Enchiladas (10 servings) (non spicy)

My family cant do spicy so these are very mild but have great flavor. My guy AND my kids ask for this dish a LOT. I originally got this out of a Taste of Home Annual Recipes cookbook but have since lost that cookbook so the recipe has been tweaked a little from what I can remember. To save even more calories you can use fat free sour cream, but I've found that makes the mixture a little runny for my taste. Prep time does not include boiling and cooling time for chicken as I usually do this ahead of time. These are also great to double the recipe and put one pan in the freezer for another night.

Shake and Bake Potatoes

This is a recipe my mom made for me when I was visiting her recently.

Crockpot Italian Chicken

I serve this with potatoes, 4 (cubed and tossed with 1 tsp olive oil and shake and bake mix.) and salad.

Chicken Tetrazzini

Better Homes and Gardens New Dieter's Cookbook

Low fat Brownies

Taste of Home. These brownies are kind of cakey for lack of a better word. But they will satisfy your craving for chocolate.

Chicken Taco Sandwiches

This is a family favorite that my kids ask for again and again. I started making it a few years ago when I was trying to lose weight, but I can't remember where I got it from.

Stuffed Shells

This is a variation of a few recipes put together.
