Moroccan Carrots

This is a sweet/sour side dish which I enjoy as a different way to eat carrots. Please note that in addition to the ingredients listed above, the recipe uses 1/2 tsp. salt, 1 clove garlic, and 1 bay leaf, which I did not include in calorie calculations because they are discarded after cooking. Feel free to adjust the lemon and spices to your own personal taste.

Lithuanian Beet Soup

This is a recipe handed down from my great-grandmother, a Lithuanian immigrant. Like many recipes from the "old country", it is easily adaptable to what you have on hand (more or less beets, cabbage, etc.) Traditionally beet soup is served with a dollop of sour cream, but I prefer it plain and my daughter likes it topped with parmesan cheese. This is a great comfort food and is loaded with nutrients!

Broccoli-Cheddar Soup

This is my healthier version of a broccoli-cheddar soup recipe I found in Parade magazine. I trimmed the thyme a bit and onion and substituted lower fat ingredients. My daughter is a picky eater, but she even loved it. Still a little high on fat grams, so I wouldn't eat it every day, but it is a good comfort food when you want something rich and creamy without totally blowing your food plan. Can be served with a multi-grain bread.
