This is my healthier version of a broccoli-cheddar soup recipe I found in Parade magazine. I trimmed the thyme a bit and onion and substituted lower fat ingredients. My daughter is a picky eater, but she even loved it. Still a little high on fat grams, so I wouldn't eat it every day, but it is a good comfort food when you want something rich and creamy without totally blowing your food plan. Can be served with a multi-grain bread.
