A mish-mash of all my late summer veggies from my CSA for the perfect salsa. NOTE: definately wear gloves when cutting jalapenos. ;)
Adapted from Taste of Home. Very light and refreshing way to serve extra cukes from the garden this summer!
Adapted from recipe from Crown Point CSA. Light and delish. Use with my Sesame Ginger dressing.
A hearty side dish or serve over greens or diced tomatoes for a meal in itself. Full of fiber and omega-3s from the olive oil and edamame. Easy to prepare!
Light and delicious. Good plain as a side dish, or on a whole-wheat wrap, or with tortillas.
Adapted from Taste of Home Comfort Food Diet recipe (added more veggies, added garlic powder)
I am having 2 servings with a bowl of sliced strawberries for a hearty delicious breakfast. And I'm not an egg eater, they're delicious! :)

A delicious and light addition to any fall meal. Can adjust for veggies available at time. Also can adjust spices per your liking. Works best by using a Dutch oven.

From Taste of Home: "This fragrant, spicy stew can also be served over couscous or with warm pita bread. A dollop of yogurt or sour cream on top will cool it down."
Adapted from "America's Favorite Name Brand Light Cooking" cookbook
Adapted from Kraftfoods.com, switched to whole wheat pasta, low-fat cheeses, and increased veggie content.
A good way to introduce kids to tuna. You can increase the health benefit by switching out for a whole wheat pasta.

Janelle's easy greek pasta salad (made with high fiber pasta and veggies from the CSA, which may change depending on what is received)
