A nice low-carb breakfast option. Easy to prepare in advance and heat up quickly when you're in a hurry. I like the sausage and cheese variety, but you could easily substitute veggies for the meat for a different taste or for fewer calories.
Adapted from the South Beach Diet Quick and Easy Cookbook (which called for goat cheese instead of feta), though I'll warn you that it's not quick at all. But it sure is tasty!
A delicious, super moist cake perfect for summertime barbeques, or really, whenever! Not a healthy dessert really, but delicious nonetheless. :-)
Adapted from SparkPeople user ASHLEEMWRIGHT's recipe by the same name. Changes: reduced Parmesan cheese to 1/2 cup, added 1 cup low-fat ricotta and 2 cups frozen chopped spinach. Yield also changed to 12 servings. But, for some reason my calorie count ended up much higher than hers, even with lean meats and low-fat cheeses. Not sure why...
This colorful, vegetable-rich, chili is also hearty and very filling with beef and beans. It's adapted from Weight Watchers' One-Point Chili recipe, though now each 1-cup serving contains 2 points.
A vegetarian, Indian curry dish with onions, chick peas, and tomatoes. Yields approximately ten 1-cup servings.
