I've cut the fat, sugar and boosted the fiber.
These are not low calorie, but they are packed with protein and fiber.
Chuck roast seasoned and cooked in oven with salsa for 3 hours at 350
1 can cr of mushroom soup
1 can water
1 can enchilada sauce 28 oz
1 can black beans
18 tortilla corn
2 cups of cheddar cheese
Mix shredded meat with beans
Mix soup and sauce together with some or the meat juice
Dip tortilla in sauce, layer 3 tortilla on bottom of 9x13 pan (have 2 pane ready as this makes 2 casseroles)
Layer 1/4 of meat on tortilla add next later of tortilla then meat. Add tortilla layer then pour 1 c sauce over top, sprinkle 1 c cheese. Repeat with second casserole. Freeze one Bake uncovered 30-45 min till bubbly
