French Onion Rice (1/2 cup serving)

This seems so simple but it tastes amazing. This is actually my sister-in-law's go to dish to take to pot lucks. The original recipe calls for an entire stick of butter and white rice but I have lightened it up quite a bit.

Mexican Lasagna

Add in's to this are endless. You can add sour cream, black olives, salsa, avacados, onion, hot sauce etc. Top with lettuce and tomato as well.

Cornbread Dressing (Basic recipe)

This was my mom's recipe. She didn't really use a recipe though. She just threw in what she had and mixed til it "felt right". Tasting all the way through the process to make sure the seasonings were just right. She would also drop it into mounds on a cooking sheet instead of one big pan and they would be these crispy "drop" dressings. They were wonderful.

Also, from this basic recipe you can add anything you like.... Sausage, turkey and drippings drippings, giblets, chicken pieces, pecans.... the possibilities are endless.

This is a remake with a healthier twist!

Hash Brown Crusted Frittata

So easy to make. Mine here is made with Low Fat Turkey Sausage but the recipe calls for Bacon. Throw in what ever veggies you have on hand or make with diced low fat ham or turkey as well.

These are perfect to take to any occasion. The are fast, easy, low-fat and everyone loves them.
