Easy skillet dinner. Start the rice before getting the veggies ready so it will be fully cooked when the veggies are done.
Prepare 24 hours ahead and refrigerate.
You can make 2 casseroles and freeze one if you like.
The recipe calls for 24 hours, but I've made it in the morning and served it that evening. I usually plan to serve 8-10 healthy appetites.
This is a very simple recipe. It has a great texture and crunch. Herbs, parsley, red pepper flakes and cooked chicken could all be added.
This is a hearty meal of vegetables, pinto beans, barley and optional chicken. I serve it with crunchy sourdough bread and light butter. Takes about 30 to 40 minutes to prepare and serve.
