Sausage-Cauliflower Casserole

I like to adapt recipes to my needs (I have a strict thyroid diet). Casseroles are becoming a Monday staple. I prep them Sunday and cook them most of the way and store them in the fridge. I ask my husband (who is home first) to put it in the oven to warm thoroughly and/or finish. Voila! A hot meal is ready shortly after we get home.

Low-Carb Eggs in a "Basket"

I wish this was my original idea, but I found it somewhere online awhile back. It's very easy breakfast when readying 3 children for school each day as well as myself for work. My eldest loves it when I make these and she will put away 4! I can't eat more than 2 in a single sitting. The original recipe said the baked eggs taste good cold, too.

Taco Cabbage Casserole

My daughter brought home a 15 lb cabbage her third grade class planted, grew, and harvested. It was not the record breaker this year (19 lbs was). I had to get creative with the ingredients around the house, thus this casserole. Plus, I have to eat low-sugar, low-carb for my thyroid, so now I'm in love. I made it for Easter and no one turned up a nose - it was gone! My children and anti-carb husband eat thirds.

Quick Vegetarian Tortellini

This is a hit with husband and kids - and there's no meat! That's always a tricky feat to manage. Expect no leftovers.

Cold Peas and Carrots Salad

This is an offshoot of traditional pea salad, but it's a few days before payday and I want pea salad, so I made do with what's in the house.

Becca's Sneaky Meatloaf

Fast and Easy recipe. I have 3 kids. I need meals I can construct with plenty of distractions and not burn.

Bunless Chicago Dog

In my constant effort to recreate dishes that are good for me but satisfy my naughty cravings, I have recreated the Chicago Hot Dog into a breadless version. Bread always ups calorie content and I'm sensitive to unrefined carbs, so I choose to go breadless whenever possible. The original recipe calls for a more fattening hot dog and cream cheese until a chef chooses lighter options. Here's my lighter options.

Becca's Awesome Pasta Salad

This recipe has evolved over the years. The original started from a recipe inspiring me on the internet, but over the years I have adapted it to be healthier version. I've moved from tri-colored pasta to whole wheat pasta and eventually gluten-free pasta. I've tried fat-free Italian and Caesar and found that full-fat Caesar please the crowd better than fat-free Caesar.

This recipe began as a twist on Potatoes Au Gratin. It's evolved from a mix of squash and potatoes into simply squash. It is always popular at work luncheons and family parties. Plus, I will eat it as a vegetarian meal (leftovers) when making other meals for my husband/children (sometimes ya gotta make two meals to make people happy, and this dish as a leftover makes me happy because I didn't have to cook two meals or sacrifice my healthy choice to make others happy).

It's also great as leftovers, so I make plenty for my work lunches. It also freezes well if you choose to make meals ahead of time.

Not Your Boring Everyday Salad

A sweet and salty salad that never gets old. It's a refreshing winter salad that I never mind eating in the cold winter months alongside heartier dishes.
