This is a re-make of a wonderful stove top recipe (http://recipes.sparkpeople.co
m/recipe-detail.asp?recipe
=292988). I ended up substituting spices as I didn't have turmeric or cumin, but did have garam masala powder. Slow cooker/crock pot works well in my tiny kitchen.
My wonderful friend served this for brunch one Sunday & it was amazing! You can use any berries. This a remake of a gluten free recipe from Urban Nester which was in turn a re-make from Inspired Taste.
This is the remake of a friends recipe I tried one rainy spring day. I made substitutions based on what I had in the house. These beans make a good base for recipes calling for canned beans or are tasty on their own. We add cheese & salsa sometimes...
This was the recipe a friend gave me when I asked for ideas on FB one rainy afternoon.
This is a remake of recipe I found in Spark. I liked the ideas but lacked over half of the ingredients. When I found myself changing everything but the tap water, I decided to just enter a new recipe...
This is the recipe from the back of the TJ's southern style greens. I replaced the onion with garlic & Andouille sausage with Lite Kielbasa as it's what I had at the moment. I also left it up to individuals to add the hot sauce of their choice...
This is a remake of a great recipe from Hungry Girl. My local stores don't have the size cake mix she uses (original recipe calls for 18.25 oz cake mix, I could only find 15.25). I also altered mix flavor & added nuts for a little extra protein & fiber.
This is great when you are hungry but don't have many calories left!
This is adapted from the cookbook, The Indian Slow Cooker.I had to adapt it to fit what spices I had on hand. I'm not sure what lentils I actually used...the bag just said lentils. I hope the nutrition facts are correct, there is no entry for dried lentils, cooked. I estimated 1/2c dry lentils=1c cooked.
Remake of a beef stew I like to make for St. Patrick's Day. I simplified the recipe a bit to save on time & calories.
I wanted to make an oven omelet; but didn't want to go to the store first. This was the result.
This is a recipe from the Special K Challenge. I use spiced cider to make the sauce as I enjoy the spices. They suggest making it a meal by adding a green salad & roasted potatoes. I also like cabbage or sweet potatoes.
This is pretty much the recipe from the Special K challenge. I subbed Laughing Cow Blue cheese for regular blue cheese as it's lower in calories. Changing the Laughing Cow flavor is fun & changes the taste easily. Garlic & herb is also good with roast beef.
This is a good dish to make the night before & bake in the morning while making the holiday dinner. Feeds the family & keeps them out of the kitchen (& out of your hair). It's a holiday dish & not low cal, but can be easily adjusted.
It was cold & rainy and I was dreaming of pumpkin pie. This was my quick & lazy solution.
I love Pho but am never sure how many calories are in the restaurant soup. This is the next best thing.
This is a version of Hungry Girl's Pasta Alfredo. I changed a couple of ingredients but the basic recipe is hers. The longest part of the prep is preparing the noodles. It will not replace a traditional Alfredo sauce but does allow you to enjoy a plate of pasta for under 120 calories!
This is my adaptation of the Hungry Girl Baked Kale. I like to experiment with the different spices. You can cut out sodium by using a no salt spice blend (I love Mrs. Dash's chipotle blend), but some days I crave the salt...
This is my version of Hungry Girl's Crunchy Sassy Chinese Slaw. I bought the wrong size broccoli slaw & had different dressing...Also the guys in the house don't like water chesnuts.
This is my version of Hungry Girl's Totally PUMPin' Fettuccine. I use the angel hair shaped Shirataki pasta as I like the texture best on it (the fettuccine is too squishy for my tastes). Her recipe calls for light soymilk but I don't usually have that about the house. Subbing that doesn't change the stats much so it's what ever tastes best to you. As always, changing the flavour of the Laughing Cow cheese is fun!
HG Alternative! Not a Tofu Shirataki lover? No problem! Make our Totally PUMPin' Fettuccine with 1 cup cooked whole wheat pasta instead! Here are the stats for that version:
PER SERVING (entire recipe): 265 calories, 3g fat, 614mg sodium, 51g carbs, 6.5g fiber, 7g sugars, 12g protein -- POINTSŪ value 5*
This is pretty much the Hungry Girl tuna casserole. I change it occasionally depending on what I have around the house.
If you don't like the taste (or texture) of the Shirataki noodles you can sub whole wheat pasta (use 1 cup cooked noodles for each package of noodles). If you use whole wheat spaghetti, the calorie count per serving will be about 278 calories per serving.
