I started with the Bran Muffin recipe found on http://www.camppatton.com and adapted it to use up what I had on hand.
Impromptu way to make healthier pancakes with what I had on hand. All the fruit was from my freezer smoothie stash.
Can also make 2 loaves. Works best with over-ripe bananas

I added the Flaxseed, Honey and Vanilla, so you can leave those out if you want.
I made this last night making it up as I went along. Some of my measurements are close estimates. I probably could have made it faster, but I was taking my time with it.
At any point if it starts to dry out or stick on the bottom, add a little more water and reduce the heat. If you use turkey bacon, you will need to add some oil to the skillet. Otherwise the chicken and potatoes will stick.
The wine is optional. You could just omit it or use broth instead. The butter could probably be left out, too. I mainly added it to add richness to the dish.
This is a healthier adaptation of a family recipe. It makes a lot, about 20 cups, but it does freeze well.
I usually serve it over rice, but it's yummy without, too.
