This is how vegetarian fare should taste; layered like lasagna with flavorful vegetables and nutty cheese. If the torte feels too fancy, prepare it casserole-style in a baking dish and serve by scooping out portions.
This was good, but more veggies could be added. Also very good served cold the next day.
This was really fast, and really easy with delicious results.
I needed hummus for a recipe but did not have the ingredients. I threw together the few items I had that would work- it is more of a bean dip than a hummus, but I will be using it as hummus.
This is a healthier version of an egg salad sandwich. The calories are just for the filling, not the bread or toppings. The 20 minute cooking time is to boil the eggs, though they should be cool or cold when making the sandwich filling.
I put my filling on whole wheat bread with some fresh spinach leaves. Yum.

I originally got the recipe out of Real Simple magazine, they had it as 'light comfort food'. I lightened it even more (they use low-fat sour cream instead of yogurt and low-fat milk instead of non-fat milk)
This smoothie is really good!! I made it for my daughter last night and she requested I save the recipe.
This is a really easy and yummy smoothie. I freeze very ripe bananas as I prefer to not use ice.
