My take on low country shrimp and grits.
A light simple pasta salad that can be eaten as a meal or a side dish.
A lighter version of Casserole Verde from the Fix-It and Forget-it Website.
Simple, flavorful shrimp salad on a hot dog bun.
A simple Caribbean jerk chicken wrap that is cooked all day in the slow cooker.
A throw together slow cooker vegetarian pasta sauce that tastes like you've worked on it for hours. I freeze any portions leftover. Goes great over rice, pasta or as a chili base.
A protein packed, hearty minestrone soup
A Mediterranean skillet served with pita bread
A taco salad using lentils in place of beef
An easy weeknight homemade tomato soup.
A warm bread salad filled with flavors and nutrients!
A modified version of a recipe I found at www.peoplesgrocery.org for Butternut Squash Lasagna using ricotta cheese and kale. I added a few new spices and halved the original. I also cut back on the amount of olive oil.
A hearty vegetarian dish.
A healthier version of traditional pimento cheese. Use reduced fat Miracle Whip for even less fat.
A hearty vegetarian meal with a twist. Planned as 2 servings, but with a side salad could easily be 4!
This recipe was created when I realized I had a few heads of broccoli that desperately needed to be used. These freeze great for easy lunches. Could be made vegetarian by switching out chicken stock for vegetable.
