I've been trying to eliminate wheat in my diet. I love hermits and had enjoyed the hermit recipe from the Pink Ribbon Diet, which uses olive oil in place of unhealthy fat. I based this on that recipe, substituting ground flaxseeds, oat bran and GF baking mix for the flour. I cut down the brown sugar, substituting agave nectar, and also added pumpkin, to boost the nutrition and because I like it.
Creamy delicious butternut squash pairs perfectly with roasted red peppers.
Mixed my Black bean salsa into bulgur wheat for a tasy, tabouleh-like salad, with a decent kick of protein and fiber.
Linguicia is a Portuguese sausage that adds a delicious flavor to this unique version of a traditional one-dish meal. Using a mix of sweet potatoes and regular potatoes adds fiber and nutrition.
When I needed more carbs (!) I mixed this together. Chewy, chocolaty goodness.
Fall River style-- with chourico (Portuguese sausage instead of traditional salt pork. When I had too much liquid for the beans to absorb I added a cup of brown rice for a new twist on two old favorites.
