This is a quick and easy meatloaf recipe that makes just enough for two people to have two servings. The meatloaf does not hold together well but we like it to break apart. We usually throw cooked french style green beans on top and mix it all together.
A fast and easy way to make a broccoli salad for two. For more protein you can add a sliced boiled egg. Another option is to add shredded cheddar cheese. Bacon can be substituted for the beef jerky.
Low fat recipe for fruitcake which I love to eat during the holiday season. I am not sure of servings, just know that it makes 2 loaf pans.
