I've had this recipe for years and cannot remember where I got it. You just can't ask for anything faster or more refreshing, especially on those hot summer days when you don't want to heat up the kitchen.This is not low fat/calorie.
ok... My girlfriend and I were living in the dorm umm.. well don't wish to confess how long ago and found this recipe on the back of mac & Cheese box. We made it.. and we ate it... it became our addiction. She still makes it for her kids and I still make it as well. It has become a favorite for both of us.
I usually add another can of tuna and a small jar of chopped pimientos. I make the mac & cheese dinner with skim milk and only 2 Tbsp of margarine and have calculated the nutritional info based on this.
Serve with cantelope and sliced tomatoes on the side.
Based on a wonderful recipe from McCall's Cooking School, Meat #22. The intro says, "Lamb and beans the French way. To most Americans, accustomed to pork with their beans, lamb with white beans is an unusual combination. But it's an everyday meal to the French, particularly those from Brittany. The beans are cooked until tender, combined with garlic, onion, herbs and plum tomatoes, then cooked again for several hours with the lamb. We like our roast lamb fairly well done, while the French prefer it pink. A meat thermometer is a great help in roasting it to just the right degree."
My son-in-law is from New Orleans and is a sensational cook. He declared this the best he's ever had. Serve over brown rice with a crisp green salad (not included in the nutritional information).
The recipe title says it all, simple, yet elegant. Wonderful green beans using walnuts, goat cheese and balsamic vinegar. Simple company dish or great for those of us who like to eat as if we were having company! Reduces easily.
This is a good company as well as family dish that I have served for 15 years. I tripled the recipe and had a "dinner for 10" a week ago. It was a hit. I am posting this at the request of my guests. There is NO CREAM SOUP in this dish. But the ingredients and steps are SIMPLE and EASY for an elegant tasting meal. Your choice whether to use the chicken with/without bones and skin. Nutritional information is based on skinless, bone-in thighs. Can use chicken breasts, thighs, halved cornish hens or 3/4" pork chops. If using pork chops cook approximately 15 minutes longer.

Another Sandra Lee recipe. She prepared it with the Island Chicken (which is posted). My s.o. loved it! So refreshing! I used fresh mango, but the jarred is easier if you want really fast, semi-home made.

This quick, low-fat, and delicious recipe is from "3 Fat Chicks on a Diet!". You can eliminate the anchovy paste and use a little Dijon mustard instead (nutritional information is based on using anchovy paste). Enjoy!
"A delicious combination of peas, onions and lettuce which are gently poached in a buttery sauce with crème fraiche and vegetable stock; this classic French recipe is a wonderful way to serve tender little peas, petits pois. This recipe makes a delightful accompaniment to any type of main meal, and adds a real splash of colour. I have stated fresh OR frozen peas in the recipe - frozen peas can be used to great effect out of season. In the absence of small silverskin onions, spring onions (green onions) can be used, making this a very versatile recipe to serve throughout the year. Cut back on the butter if you are on a low fat diet - the taste will be less rich, but still as delicious!"

This is NOT low fat, but I suppose you could do some substituting to make it so. Me, I'll just splurge once every 3-4 months!

This is a wonderful dish for company or a special occasion. Worth every minute and every calorie! The Normandy region of France, which is North of Paris and lines the English channel, is known for its cream, butter, cheeses, apples, and apple brandy. In this version of Chicken Normandy, or chicken à la normande, we are braising whole chicken legs in apple cider and brandy, and serving them with a sauce made with cooked apples, onions, and cream. Just the thing for the fall. We're using whole chicken legs because the flavor is richer, and the dark meat holds up better to long braising. But you could just as easily use chicken breasts. You can also serve this classic combination of apples, brandy, and cream with other proteins, such as mussels (moules à la normande) or pork.
This is elegant enough for a Sunday brunch, and provides a different way to enjoy your breakfast oatmeal. It can be enjoyed as is, or topped with maple syrup. Leftovers are good cold or can be reheated in an oven or microwave. From Lean and Luscious and Meatless.
update: needs a 1/4 tsp salt and more sugar/sweetner in my opinion, but I'm not changing the recipe. My S.O. thought it was perfect with maple syrup on it.

I think this recipe is an absolute gem. Really, in all my years of cooking, I don't think I have ever made chops as delectable as these! Crispy-crunchy on the outside, meltingly tender and moist on the inside. The key, I think, is the salty milk marinade/brine, and making sure not to overcook them. from the original recipe. Prep time does not include brining time of 1-4 hours.

Perfect Medium Rare Roast beef, every time. You just put it in the oven, cook it, turn oven off, then head off to work or where ever. Purchased Cajun or Creole seasoning flavors both the catfish and vegetables in this 30-minute dinner. This dish is best with fresh vegetables, but I was pleasantly surprised at how well it turned out with frozen okra and corn. Serve with cheese grits and a green salad.
Feel free to use tilapia or basa instead of the catfish.
