You're probably familiar with quesadillas made from tortillas and cheese. Squashadillas look deceptively similar- but they're dairy free. Cut them into triangles and dip in salsa for a great party snack.
Dal (pronounced "dahl") is a thick, simple, lentil or split pea soup that is popular all over Nepal and India. It tastes delicious over cooked rice or as a tortilla filling. Dal is pretty thick; if you like a thinner soup, add an extra cup of water.
