I created this recipe in an effort to duplicate the soup at our local Mexican restaurant. Their chicken soup has long been one of my favorites and I wanted to be able to make it at home, so after eating many bowls, I created this recipe
This is a great way to make your holiday dressing when you need your oven for so many other dishes.
Feel free to adjust the amount of broth to your liking. My family likes a very moist dressing.
Be sure to not pack the crockpot tightly or it will overflow.
Scallops lend a lovely sweetness to this chowder, but they're relatively expensive. You can use shrimp or any firm, white-fleshed fish, such as cod or halibut, instead.
This is similar to another posted on SparkPeople, but I added it due to a minor change in the way I make it.
I first made this recipe in 1974 and it has been a staple in our home ever since.
I always make a huge pot of sauce. The sauce ingredients listed above are half of what I make. This makes enough for me to freeze two containers of sauce for other meals. The ingredients listed above are for the nutrition purposes. The manual ingredients list is what I actually make.
I fell in love with halibut when we visited Alaska last year. Since that time, I have been attempting to fix it once a week. When fresh, it is so mild and sweet.
