I absolutely love these ribs. So rich in flavor and an economical cut of beef. This is a 5 star recipe if you have the time to let it cook slowly. Tip. Prepare in crock pot the night before and put to cook in the morning. Then you will come home to a delectable meal! Great with Mash Potatoes and Asparagus. Yummmy!

Smokey White Bean Chicken Chili

I found this on the internet and modified it slightly to reduce the overall sodium. You can use canned beans but I choose to go with dried pre-cooked great Northerners. You can also purchase a rotisseree chicken or roast your own

Weight Watcher's Mexican Casserol

I found this recipe on pininterest originally and followed it to a T with the exception of fresh tomatoes. The original recipe said 6 servings. But neither my husband or I could finish 1/6th of the casserole. It's more like 8 servicings. Very good. A bit high on the sodium
