Use your favorite vegetables for this quick and easy stir fry dish.
Meaty portobellos are especially good for adding substance and flavor to this soup, but shiitakes or other mushrooms will work well, too. You can also add a ham hock (not included in nutrition calculations) to the pot while the split peas cook, if you like.

This roasted root vegetable soup combines parsnips, sweet potatoes and turnips with a little sweetness from a granny smith apple and a little kick from a jalapeno pepper. The flavors blend together ina smooth puree that's thick and rich with flavor yet very low in calories. You can enjoy it as is or add smoked turkey and sauteed leeks for a little more filling dish. Lots of ingredients, but worth the effort. Tangy, delicious and guilt free. Great with any fish. I have made with and without capers - it is great either way.
These are easy to prepare and freezes great! Recipe easily doubled for freezing.
