Winter Squash, Leek, and Apple Soup with Cider Creme Fraiche

This came out of the Nov/Dec 2010 Vegetarian Times. It is an awesome recipe, perfect with no alterations. The preferred squash to use is called Red Kuri and is worth the effort to look up if you don't know what you are looking for at the grocery store. The recipe says you can use other winter squash, too, I just haven't done it yet. As with most pureed soups without a cream base this freezes beautifully. Also, this is a bit time consuming to make, but so worth it!!

Split Pea and Zucchini Soup

I have modified this recipe a bit as I like using my immersion blender. It calls for 2 cups yellow split peas, which I have reduced to 1.5 cups so the soup is not too thick. A very tasty soup, with some prep work because of soaking the dried yellow peas.
