My mom always had these growing up. Turns out, that completely unmodified, these are better for you than a lot of desserts out there
Feeling inspired reading Mark Bittman's "Kitchen Express", I created this recipe based on one recipe I found in this book.
I had delicious pineapple ice cream at the Dole plantation in Hawaii. This is my attempt to reproduce the experience at home, in a semi-healthy way :) Unlike most frozen yogurts, you do not need to use Greek yogurt.
I took elements from a few ice cream/frozen yogurt recipes and made them into my own.
most ice cream servings are 1/2 cup, but who eats just that? Please note the serving size for this recipe is a full cup, thus the calorie difference.
Ok, it's blueberry crisp, but I made it with healthy ingredients, single serve so I can enjoy it for breakfast :)
My mom made this when we were growing up with pasture raised beef from my uncle's farm. I make it now with bison or grass fed beef. I use fresh Tomato when in season (unless pressed for time). Serve with a spinach salad or steamed broccoli.
no feta and we love bacon, so I altered another sparkrecipe slightly. Also wanted to use whole wheat flour.
roasted beets - I cut down the oil from this recipe I found while looking for a way to eat beets with my terriyaki dinner
I took the basic elements of a BLT and turned them into a whole wheat pasta dish. I use angel hair so it cooks quickly as this is a lunch dish for me.
Taking a cold pasta salad to use my cucumbers and adding shrimp to make it a meal. Another personal twist on a cooking light recipe
similar to Trader Joe's Mandarin Orange chicken, only leaner. I serve with steamed broccoli and brown rice. Calorie count does not include either.
Our family's take on the famous Giada Laurentiis mini Frittata recipe. Calorie count based on serving size of 4 mini fritattas. Makes 24 total.
One of the hardest things about the change to a healthy lifestyle was my family's love of comfort foods. This allows us to indulge this love and is one of my husband and son's most requested dishes. Slightly time consuming, so we usually save this for the weekend
I modified this cooking light recipe to eliminate many of the artificial filler type ingredients and include more healthy fats. For best flavor, use a high quality parmesan. Nutritional info includes the whole wheat egg noodles.

This was a recipe I found while looking for crock pot recipes that did not use canned condensed soup. I adapted the original to our family's taste and this is the outcome. Delicious weekday recipe. Easy. I recommend a grass fed london broil to up the health factor.
Serve over mashed potato and enjoy with a whole wheat dinner roll.
