A yummy alternative to regular ice cream, and a good way to use up ripe bananas. No sugar is added. Adjust cocoa to taste.
This generous sandwich is meant to be eaten as a half-serving alongside a steaming bowl of your favorite soup. Forget boring old American cheese. This sandwich is made of 1 oz. of Muenster and a 1/2 oz. of Colby to give a richer flavor, along with the low-sodium deli chicken. When you're craving comfort food, this will satisfy.
Only 3.7 g of fat per serving, this recipe is adapted from several variations of green curry coconut soup. Instead of green curry paste, I used a delicious Jalfrezi simmer sauce by Seeds of Change which I found in the organic section of Kroger. The coconut taste is very subtle, which allows the fragrant basil and curry to shine through.
This lo-cal dessert or snack is only 79 calories per serving. A tropical blend of Asian pear, papaya, mango and fresh blackberries. The lemon juice helps preserve it and the dash of greek yogurt gives it a little creaminess.
Delicious on wraps or toasted buns, this healthy dish is a great alternative to regular burgers. The lentils and crumbs made from sprouted grain bread are full of fiber and vitamins/minerals. Even my husband enjoys these for a light lunch or dinner. Double or triple the recipe, freeze on wax paper, and enjoy lentil burgers for up to a month. (Adapted from a slightly more complicated recipe from Cooking Light)
This delicious sauce is low-cal and perfect for wraps and sandwiches. I adapted this recipe from Cooking Light.
High in fiber and nutrients, this filling dish is made with red and white beans and a small amount of penne pasta. Add some southwest style spices, a trio of sweet bell peppers, and a little shredded swiss and green onion garnish, and you have a spicy little meal or side dish.
This version is gluten-free since there is no pasta added, but this tasty minestrone is loaded with garden veggies, mushrooms, healthy red beans and lean chicken breast.
I discovered a nice blend of spinach with bok choy and baby swiss chard at Kroger's which became the base of this delicious salad. The sweetness of the apples and oranges mixes with the tanginess of the balsamic vinaigrette and lemon juice. Very flavorful and pleasing taste, great portable lunch when you're on-the-go.
This spread uses Neufchatel cheese to save on fat grams. Delicious schmear on bagels, or serve with apples or crackers/chips. I love it with sweet potato corn tortilla chips. Feels decadent. (adapted recipe from Pinch My Salt)
This meal is low in fat and calories, and the black beans add fiber and nutrition. Serve with salsa and low fat baked tortilla chips. A quick and easy, family-friendly meal.
My husband's sudden decision to switch to gluten-free inspired this spur-of-the-moment recipe. These tasty pizzas make a great snack or meal.
