A low fat pumpkin spice muffin that is quick and easy to make. No oil or butter is used in this recipe. To jazz them up into cupcakes they can be topped with cream cheese frosting and toasted pecans or walnuts, but this recipe only calculates nutritional info for the muffin itself.

-fingers.html and altered the seasonings to my own tastes. Be sure to use a wire rack over your cookie sheet to keep the panko from getting mushy. These baked chicken tenders turn out crisp and juicy - a great, healthy alternative to frying. The recipe is versatile and the seasonings in the panko can be altered so the tenders are italian, asian, etc.

A healthier version of lasagna that my family loves - including my 7 year old son! Even if you don't like spinach you will probably like this, the spinach flavor is not overpowering.
