A low fat pumpkin spice muffin that is quick and easy to make. No oil or butter is used in this recipe. To jazz them up into cupcakes they can be topped with cream cheese frosting and toasted pecans or walnuts, but this recipe only calculates nutritional info for the muffin itself.

These baked chicken tenders turn out crisp and juicy - a great, healthy alternative to frying. The recipe is versatile and the seasonings in the panko can be altered so the tenders are italian, asian, etc.
