The name says it all! These are delicious, chicken stuffed poblano peppers. Bell peppers can also be used, but won't have that special kick the poblano adds.
My husband loves carrots, but I'm generally not a fan. I do however love soup. Inspired by carrot soup recipes I've seen around the net, I decided to create my own version. We both loved this soup and wish I had made more! I will be making it again soon.
After investing in a high-powered blender, I experiment with smoothie recipes almost daily. Sometimes they're so good I feel the need to write them down, like today.
This was my first green smoothie to try since owning a Blendtec blender. I was hesitant at first and figured I would be "wasting" all these ingredients. But WOW, this was soo good - I could drink these all day. If you put it in a colored cup you'll never even know it's green! There's not even any added sweetener.
This is a GREAT low-fat version of the famous frappuccino. This works best if made in a high-powered blender like the Blentec or Vitamix which leaves no ice chunks, but I suppose any blender will still give you a tasty product!
An Italian version of my quick & easy chicken.
Easy weeknight recipe for a healthy twist on Tex-Mex food. I serve with sour cream and it almost tastes like enchiladas.
This is a savory restaurant-style sauce that I serve with sauteed or baked chicken breasts.
Three simple ingredients to a delicious cobbler dessert.
This is my adaptation to a classic Weight Watchers "0" point soup recipe. I use this while dieting as a filler with lunch or dinner and to easily add more veggies!
My low carb spin on a classic.
Yes, this is low carb -- but it's still a dessert and should be eaten in moderation. This is great for a once in a while treat, even for those who aren't specifically on a "diet" -- Try it! It's actually my favorite cheesecake recipe but I'm using lower calorie ingredients and no crust in this version.
This is my go-to breakfast (or dinner!) when I'm craving something sweet!
Say goodbye to store-bought pre-packaged processed foods. Dieting is so much more satisfying when you can eat 'real' food, simply prepared with lean, healthy ingredients. This chili is a great example. No cardboard here!
Note: If you're watching sodium intake try looking for no-salt-added tomatoes and tomato sauce and use Morton's light salt.
Great comfort-food crock pot recipe. Even though it may seem like this dish should have 2,000 calories, each serving is under 300!
Great weeknight recipe to make use of leftovers! Any time you're making rice, chicken or pork chops - just make a little extra and refrigerate for this recipe. With everything being precooked (except the eggs) this recipe only takes about 10 minutes to prepare.
Quick, easy, tasty and healthy!

I'm a first time mom due in less than 3 months. I already know I will be busy with my little one once he gets here so I've decided to plan ahead and create a cookbook full of simple, tasty, reasonably healthy meals, with a preference toward those that will generate leftovers.
