Simple Turkey Lasagna

This is just a quick rundown of the ingredients I used to make lasagna. Instead of doing it in a 9x13 inch pan, I did it in 2 8 inch pans, and brought one to my neighbor, leaving me with 6 large servings.

Eggplant Caponata

This is a basic recipe that I added zucchini to, because I had to use it up or it would go bad. Turns out, I liked the addition. You can lose the zucchini if you prefer.
You can use this as a main dish over pasta, a side dish, or an appetizer with crostini or bread, or whatever you like. This is a pretty adaptable recipe.
My husband usually takes a scoopful of this, adds some chicken, and eats it over pasta - because he feels it'd be completely perfect with meat.

Tzimmes (Sweet Potato and Carrot)

This Tzimmes recipe is traditional - it has sweet potatoes, carrots, dried apricots, prunes, dried apples, and orange juice. I make it for my Pesach Seder with Brisket (the more fiber the better, that holiday), and for Rosh Hashanah (though I add some honey then).

It does not have pineapple, mandarin oranges, or marshmallows (yes, I did find a recipe that called for that. This isn't Thanksgiving, folks).

Charoset, Nut Free

This year, I'm having someone over for the Pesach seder that is allergic to nuts. I spoke to my son's preschool principal, and she gave me the Sephardic nut-free recipe that she uses at the school. I removed the grape juice and honey, because I felt it was sweet enough without it.

Just like with most Jewish cooking, the recipe called for a handful of this, and a handful of that. I've given approximations of what I used, so please adjust the measurements to your liking.

Whole Grain Pancakes

My basic recipe for pancakes.
Add blueberries if you like.

To smooth out the texture, blend the cottage cheese and oatmeal before adding to mix.

Sometimes I add ground cinnamon to the mixture, since it helps regulate blood sugar, and tastes great!

Lowfat Sugarfree Microwave Chocolate Pudding (individual serving)

This is a very chocolaty but not very sweet pudding (reminiscent of a good quality dark chocolate bar - high on chocolate flavor, lower on sugar).
*If you like your pudding sweeter, use more packets of stevia.
*If you like it less intensely chocolate, lower the amount of cocoa powder.

Buffalo Nachos

A quick vegetarian nacho snack. Add chicken if you like.

I invented this when I was hungry after reading a bunch of articles on SuperBowl snacks. One can only look at so many pictures of buffalo wings before you snap.
