I make this with ground turkey, but original recipe says you can use any ground meat, or tenderloin. The cookbook also says that one recipe serves two, but I have found that it's enough to serve four and have listed this way. You can substitute white rice for brown, but it will reduce your fiber. You can also use beef broth if cooking with beef.
This is a tasty way to get the flavor of a BLT and real pork bacon, without the high calorie, fat, and sodium values.
