This is a great variation on classic chicken cacciatore, with a twist that makes the sauce taste like your favorite vodka sauce, without the vodka!
Here's an easy way to make delicious chicken cacciatore at home. For this recipe, you can choose your favorite red pasta sauce, though a Marinara-flavor variety is best for that authentic Italian taste. Also, if you are able to obtain an organic vegetable packet that has onion, green and red pepper strips already pre-washed and cut, you can use that instead of fresh vegetables.
This is a slightly altered version of my mom's original Shepherd's Pie recipe. For the mushroom lover, this recipe includes 3 large portabella mushroom caps, and for extra veggies, a hearty helping of both peas and corn. Made in an (approximately) 9x9 dish, this dish can serve 9 or more in moderate single portions.
