Homemade veggie burgers are the BOMB! This makes a BIG batch because I like to freeze them. Takes a little bit of time to make and bake, but its well worth it!
Yummy, Easy, Fresh and Filling. I made this pesto when my garden Basil grew out of control and I needed to do something with it. Its awesome on chicken, fish, or pasta. It freezes well so you can enjoy the taste of summer in the middle of winter. Enjoy!
My basic Recipe for marinating and cooking fish. Works well with Fresh Tuna, Mahi Mahi, Opah, or any other local fresh catch of the day!
This is a yummy mix of grains I discovered on my quest to get away from processed foods. These grains all have different cooking times, but soaking them overnight fixes that problem. They will all steam up in about 20 minutes, the same as white rice. They cook at a 1part grains to 2 parts liquid ratio. I get all these whole grains from the bulk food section of the heath food store and mix them up in a big container for storage, then cook up portions as needed.
I try to cook with a lot of non-processed whole grains, but rice gets boring. I started playing with different combination of grains, herbs, flavours, nuts, and veggies. All ingredients are optional or substitutable. play with it and enjoy! Quinoa and Millet are a nice blend because they both take 20 minutes to cook, fallow 1:2 grains to liquid ratio, complement eachother in texture and taste. also millet is much cheeper then quinoa, so mixing them is good for teh budget!
As part of my quest to eat more whole grains and unprocessed foods, I've developed a few tasty blends. This one is the simplest version, but go wild and adapt it to your tastes!
Half of my extended family is vegetarian, so our Thanksgiving and Christmas Dinner spreads include a wide range of meat-free dishes. In fact, some years the turkey is a side dish to the veggie feast. This is one of my favorites. Its beautiful to look at and super tasty. I hope I've got the portions right; there might be some stuffing overflow. If there is, mix it with grains or use it to stuff a pepper or squash.
This dish worked out really well, and I was surprised at the low calories per serving. The mustard greens are a nice mix of textures with the stems and leaves cooked together. Its very filling and full of leafy green goodness!!! This could easily become a main course by adding some tofu or chicken to the stir fry. We had it with a side of grains and some pan seared Ahi Tuna.
Nice easy way to made kale. It can be served warm or cold and has a nice nutty flavour.
WAHOO for fresh juice!!!! this is my favourite staple juice blend. Buy a big bag of carrots, a couple bags of apples a couple of cucumbers and some fresh ginger, turn on the juicer and BINGO...Juice for the WEEK!!!
I made this stir fry the other night using left over grains. yummy!
awesome pizza i made last night! one of the best!
A yummy dish shown to me by my friend Jala. Spicy, cool, smooth and filling. A little bit of prep work and forethought, but always worth it!!!!
IMPORTANT: For best results, the fish needs to sit overnight in the lime juice to 'cook'.
This recipe was given to me by my friend, Jess. It's good and good for you! I think she got it from 15 minute Favorites by Art Ginsbery.
Quick & Dirty Fresh Fish Tacos. Cooks up in a couple minutes and always makes my husband smile! He says he could eat them everyday!
A yummy Hawaiian salad that's filling and healthy. Its light, cool and clean, but keeps you full all afternoon. It makes a great meal on its own or a side dish at a potluck or BBQ. The other thing I love about this salad is that it keeps well, too. I make up a batch on Sunday and have it for lunch all week! This is a modification of a salad you find at the grocery store delis here in Hawaii.
