I modified a recipe from another cookbook and have come to this version. This is easy and the muffins freeze well - I usually double the recipe. My daughter loves them for breakfast or snack.
Cubed tofu is cooked with broccoli, scallion and yellow pepper. Nice "kick" with red pepper flakes.
My Greek grandmother used to make this for me. I just remembered it and made it for my 7 year old. She loved it! After serving, add a tablespoon of ketchup and mix it in for added flavor.
