Slow Cooker Chickpea Curry

I modified this recipe to include a lot more protein. I cooked it overnight in the slow-cooker and I'll be honest, I should have used fresh cauliflower. I would recommend that.

Olive Lentil Burgers

The only modification I made to this recipe from the Post Punk Kitchen is leaving out the onions. Mostly because I don't have any onions and was far too lazy to go to the store. She uses a 3" cookie cutter to form her patties. I use a standard size burger press. She got 6 out of hers, I got 4. I like my burgers to be substantial so this worked for me but feel free to play around with size and shape. My mom thought I should make them shaped like cows. My mom thinks she's funny.

Vegan Slow Cooker Lasagna

I wanted to try Chef Meg's Slow Cooker Lasagna but it was full of meat and cheese. This is a vegan take on the same recipe -- made with 6 instead of 8 servings because... I don't know who she was kidding with that 8 business. Some key differences -- we're using about twice as many noodles but eliminating cheese and using basic tofu "ricotta" cuts so many calories that it comes out about even. You're going to also lose about 4g of Fat and about 3g of protein if you follow her suggested 8 servings but, again, we're figuring on this being 6. There was a lot of debate on Meg's recipe regarding what the cup size measurement is of a serving. It depends a great deal on your particular slow cooker as to what it will look like but it is about 1.75 cups worth of the mixture. It should contain about 2 noodles, about a cup of "meat & sauce" and about 1/4 cup of the "ricotta". I hope this helps.

Vegan 100 Calorie Cinnamon Pancakes

AMROX123's Cinnamon Pancakes make vegan -- and less heavy, with the inclusion of two forms of egg replacer and some of the whole wheat replaces with regular.

Using tofu and flax meal together as egg replacer keeps both the leavening and the protein characteristics of the eggs used in this recipe intact. Its important to really beat the tofu down with the other liquids, though, or your pancakes will be... really weird. Like this "pumpkin pie" my ex tried to make with extra firm, nonsilken tofu and it was like pumpkin flavored tofu. Delicious. But really weird.

Thai Jungle Curry

Jungle Curry doesn't have coconut milk. This recipe is from food.com -- I've never made it but I had it at dinner last night and couldn't think of a better way to add it to the database. I've edited the recipe to reflect the ingredients in the curry I had.

Clean Out the Toppings Drawer Trailmix

I make my own "instant oatmeal" packets at home with dried fruits and nuts and I always run out of oatmeal before I run out of everything else. So I made this trail mix with the leftovers. Yes, I could have just saved them but trail mix is delish.

Leeks & Sprouts with Edamame and Israeli Couscous

I had never purchased a leek before making this recipe and I already am craving it again. What I love about SparkPeople meal plans is the concept of combining foods in units so that I can make nearly anything and know as I'm making it that it will be within the range of my assigned meal plan if I just use the right building blocks. I made up this recipe but I'm sure that a recipe just like it exists somewhere in the world, the flavors are made for one another.

Vegan Sweet Potato Chili with Mole seasonings

Based on a Real Simple recipe... But I doubled the beans, sweet potatoes, and seasonings and added carrots and beets for an extra veggie oomph.
