This is a standby with our family. I use whole wheat noodles (penne, egg noodles, etc.) and extra lean ground beef (4% fat) so the calories and fat are a bit lower than what is listed here. I also use low sodium tomato sauce and reduced fat ricotta, further lowering calorie/fat content.
My sister in law can't eat foods with dairy in them and came up with this delicious low cal creamy soup
