Okay, so I KNOW this recipe looks really busy, but with my sporadic taste buds and tendency to think of trail mix as boring, this is om-nom-licious, with only a handful of calories, a huge amount of Vitamin C, Manganese, potassium, and enough protein and fiber to get me through the days when I don't have time to sit down for a meal! Plus, it's very colorful, and it makes a TON. It's expensive, but it makes you feel like a million bucks.

I went through a few weeks wherein I refused to shop for groceries (money was really tight), and towards the end, I had to get pretty creative with our frozen and canned foods.
I love fusion foods, and I had never tried a british/mexican mix before, so I thought I'd give my take on the idea of a shepherd's pie, but in a more mexican light. The "gravy" certainly isn't gravy at all, but it's a surprisingly tasty dish!
The cheese and egg can be easily omitted or substituted (mmm, daiya!) if you want this to be a vegan recipe! Enjoy!
This is a VERY hearty curry-esque dish, great for rainy and snowy days. Make sure you have small bowls, because you'll be tempted to get seconds. :)
