This is a great recipe for those extra summer vegetables. I generally used more of everything and do a big pot that will carry us for two or three days. Don’t forget the cauliflower because this is what finishes this dish. Dried black or kidney beans also adds a nice touch.
“Delicious and very easy to make. You can use 3-4 cups of vegetable broth instead of the chicken broth or the water and bouillon if you wish. Vegetable broth and almond milk will make this completely vegan. If you don’t have a “stick” type immersion blender you should think about getting one. It makes the process of blending pretty painless."
This recipe is versatile. You can use it to make lasagna, pizza, or add chicken and cheese for a casserole. We like it just the way it comes out of the crock pot.
With just two teaspoons of olive oil, this fragrant stew is both heart-healthy and satisfying. To keep this flavorful dish vegetarian, substitute vegetable broth for chicken broth.
