My husband is a BBQ fanatic. He loves to do BBQ competitions and has won several backyard competitions. I do not eat meat so I have not been able to enjoy his yummy food. Since I am on the team, we have doctored some of his recipes so that I can taste the flavors to help him out. This turned out really well!

This is a super yummy soup on a cold, winter day.
Easy to make and super yummy Potato salad
This very tasty dish was created by husband who made it with chorizo. The chorizo adds several 100 calories. Since I do not eat meat (but will eat seafood), I added the textured soy protein instead. We also topped it with the Avocado- Cilantro Sauce which consists of Avocado, Sour cream, cilantro, and lime juice processed in a food processor until smooth. The Avocado Cilantro Sauce is not calcluated in these calories... also served with a side of Black Beans and Chipotle Slaw!

Yummy wrap that is Meat Free for one!
My hubby and kiddos are meat eaters and I am a vegetarian. I am sometimes left on my own for a meal. This is quick and easy and super yummy! My family started eating this too by adding real chicken to the wrap.
I was looking for ways to increase my potassium so I added the avocado. If you want to lower the fat, you can leave that off.
