Want a low carb Mexican treat? Try these net 4 carb per serving quesadilla. Talk about yummy! Adios mi amiga(o)!!! You can even add avocado (or guacamole) and/or sour cream (without hardly raising carb count). You also can add any meat of your choosing and it stays low carb.
This is a low-carb treat for a pretty quick meal. You can add spices for your taste, but I use cayenne pepper, lemon pepper, and black pepper.
This isn't just your regular tuna salad. It's tuna salad with a twist...lettuce! I never understood how you can call something a salad wihout lettuce, so here's my answer to that...add some! :-)
You can use other healthier blends of lettuce too, but iceburg is used here to show the least nutritional value. If you're not worried about the carbs add diced cucumber with or without skin (skin has more carbs).

This salad is also great made with bright green broccoflower, a hybrid of cauliflower and broccoli. For variety, add two sliced hard-boiled eggs.
