A healthy and low calorie warming soup for those cold winter days. I usually stock up on butternut squash when they are in season. You can buy them whole at Trader Joes for the same price each as you pay by the pound at most other stores. I split them in two, remove seeds, brush with olive oil and bake (covered with foil) until they are very soft. Then I scoop the flesh into my foodsaver bags and freeze them in two to three cup servings for use in my soups. The soft squash is what makes my soups thicker without using the high calorie cream.

This is a recipe I made up myself after I bought my Vitamix blender (Love It!). It's so healthy and filling and if you want to add more protein just throw in a couple cups of diced chicken at the end.
