Quick, inexpensive, and easy chili. Great cooked in the crockpot too. Freezes well. I put individual portions in a small freezer bag, then thaw and heat in the microwave for a quick meal.
South Beach and Atkins(phase 2 and up) friendly.
Great for Sunday brunch with sliced tomatoes, or make ahead and keep in the fridge for a quick "on the go" breakfast. Calorie and carb count are low, so go ahead and have two!
2.6 net grams of carbs per serving. I serve this over rice for my family members that aren't low carbing, but it is delicious by itself. Carb counts will vary with different brands of tomato sauce, but I have found Contadina or Hunts Natural have the least sugar.
These are a great way to work in a serving of vegies and tasty low carb subsitute for hash browns. Make sure to drain as much water out of the cauliflower as possible and don't skimp on the cheese. It not only adds flavor, but helps hold the cauliflower patties together while cooking. Just use the reduced fat kind if you are watching your fats.
Delicious served with a dollop of sour cream.
