Cut all veg into cubes / small pieces . PLace in pan with butter and sweat for 10 mons on a medium heat. Add the oxo stock cubes and a litre of water and simmer for 30 - 40 mins. Add milk at end and blend
This is a simple lunch light dinner recipe using bonless and skinless chicken thighs (you can do the same with whole thighs but its better without the skin).
Serve with a salad and sweet potato wedges or with nice bread.
Pop everything in a blender and blend till as smooth as you like it. Add the salt a pepper to taste. If too thick add more oil or if want it lower fat a little water and blend well. For a bit of spice a chili could also be added
Tghis is best if made with Butchers back bacon rashers (unsmoked)
