Since I can't properly make an omelette (I have trouble flipping it, lol) I invented the Scarmlette. :o)
The LC wedge adds such a nice creamy texture!
Perfect quick and hot meal. Good for when you're in a hurry or at the office. I make this about 3 times a week.
What I love about this meal is not just how yummy it is, but cube steaks are very cheap!
Things we do different from the original recipe:
-We don't put in the fenugreek leaves
-Sometimes we'll substitute the mango chutney for peach preserves. Still very good!
-We only use the chicken stock
-Original recipe calls for Canola oil to fry with, but we use vegetable
-Original recipe calls for 1 cup of whole milk, we use 1%
I was a bit worried about how this would turn out and not only do I like it, but my husband is a big fan too! Great snack to take to the office or when in the mood for something crunchy and salty.
This is a great recipe for anyone watching their carbs and for those of us who want the look and taste of mashed potatoes, without the guilt. Even my husband who hates low fat meals will devour this!
Love this salad. The cafe in my office building makes this. It's super yummy! Not sure of the exact measurements though.
