Banana Bread Pudding

decadently delicious. uses old black bananas. you can reduce calories considerably by substituting fat free cream, Splenda, Can't Believe It's Not Butter, Eggbeaters, etc. for the real ingredients. You'd have to re-enter the recipe, tho, to get a better calorie calculation. Also, you can re-use one more old banana with each serving or two if you sautee it with butter, sugar and banana liqueur, like galliano,

Fibernana Muffins

I use this to get rid of old, black bananas that haven't been eaten. People do eat these, and the love them and they're good for you. I think you can substitute applesauce for the oil (tho I haven't tried it), and sugar for the Splenda or Twin, and eggbeaters for the egg. I've tried it once, and think it would taste better with pecans and cinnamon swirled in, but these are excellent, anyway.
