At only 71.2 calories per slice, this is a wonderful alternative to regular french toast. The vanilla soymilk adds wonderful flavor but additional vanilla can be added (or cinnamon for a wonderful cinnamon-roll like flavor!). I used spray butter and lite maple syrup for a decadent tasting breakfast under 200 calories.
This is yummy as a sandwich or on a bed of lettuce.
I made this one up as I went. I basically just looked to see what I had in my fridge and pantry. My family really loved it and I was able to sneak in a few veggies!
