Risotto with Spinach

I have a deep regard for Risotto...it does take a bit of practice to get the perfectly creamy consistency called for, but the finished result is heavenly. I add spinach for an added flavor profile and Romano cheese for a sharper taste. I can't stress enough how home-made chicken stock makes a world of difference in this dish; commercial stocks just don't cut it with an awesome Risotto!

Pea Soup with Bacon (Organic/Primal)

A rich and smokey soup perfect for cold winter days...

Cranberry Crumble

No one will notice there's no sugar in this dessert...the combination of tart cranberries and subtly sweet almond meal and coconut is fabulous!

Southwestern Bison Stew (Spicy)

Stew or chili (depending how much cumin you use) this dish is rib sticking with a yummy smokiness. I believe in slow food, and I cook this for 3 hours...pair with some greens and a salad for a great meal!

Brussel Sprouts With Bacon + Garlic (Organic)

This dish is SO delish...if you're not a fan of sprouts, you will be after this! Brown sprouts on cut side; opposite side will be bright green.

Classic Chicken Soup

This soup isn't for the squimish when it comes to fat content...I'm a borderline Primal who believes in the importance of healthy animal fats (only from organically raised animals) and the use of skin, bones and organ meats in dishes...this soup is really one of the best you'll ever taste! I'm also a believer in "slow food"...it usually takes me 5 hours to make this soup, but it's so worth it!

Three Bean Soup (Organic)

Yummy soup for the autumn days...all ingredients used are organic...

Mexicali Beans

You'll never miss those processed barbecue beans again! All ingredients used, down to the spices, are organic...the prep time seems a bit out of control, but it's based on using dried beans...they're lower in sodium and have a much firmer texture than canned.

Farfalle ala Nona

Quick, easy and really tasty, I like to eat this dish before hitting the gym, with a side of protein...using fresh Romano cheese makes all the difference...

Italian Vinaigrette

At 12.8 cals per tbsp, you can splurge on the dressing...this vinegar is SO mellow, you don't need to use a lot of olive oil...

Basic Italian Bread Crumbs

You can alter the seasonings to your taste...I'm used to garlicky, peppery crumbs!

Eggplant Parm

I love eggplant parm, and always thought breading and frying the eggplant first was overkill...it doesn't add a thing to the dish...in this much lighter and quicker version, the ingredients are all organic, and the only cheese used is Pecorino Romano...a more robust tasting cheese than Mozzerella...Hope you enjoy it as much as I do...

For all you Italian ice junkies, and even you ice cream lovers out there, this ice is to die for! And at only 20 cals per serving, you can indulge whenever the mood strikes...You're gonna be very HAPPY!!

8 Minute Baked Penne

OMG..this recipe is SO fast and SO good...

10 Minute Marinara Sauce

Being Italian, I never, ever used a commercial brand of pasta sauce...Making a homemade Marinara sauce takes 10 mins, especially when using organic tomato paste...it's so sweet and delicious, it doesn't need to cook long to reduce tomato acidity...try it...you'll be glad u did! This versatile sauce is great to freeze in small batches for later use over pasta, grains and in other recipes. All sorts of extras can be added...everything from white truffle oil to mushrooms to red peppers...adding capers and anchovies transforms it into a Puttanesca sauce...Enjoy!

Rosemary Mushroom Chicken

This recipe makes a yummy quick lunch or dinner...especially when left over...Bragg's Aminos are a great way to perk up a dish, without using salt...it does have sodium though, as it's soy (non GMO) protein, so try not to use more than .5 tsp...

Spicy Sesame Prawn Salad

This sounds like a lot of prep work, but it's not...basically, it's a salad with shrimp, sesame and lemon zest, with a vinagrette...makes a really good summer supper...all ingredients should be organic, especially the lemon zest!

Ginger Lime Mahi Mahi with Jalapeno and Sesame

Sort of Asian/Mediterranean fusion...all the ingredients used are organic/wild; the breadcrumbs are homemade; use toasted, unhulled sesame seeds for optimum flavor...the blend of tastes in this dish are really interesting...

Lacinato Kale Salad

Lacinato (or dinosaur) kale's leaves are more adaptable to salads than curly leaved kale; just marinate in vinegrette for 30 minutes before serving to wilt the leaves...makes an interesting salad!

Mediterranean Prawns

Since I'm single, this dish yields about 4 meals (around 7-9 shrimp per serving, as I tend to chow down on shellfish)...the marinaded shrimp lasts about 5 days in the fridge, and is very versatile...I toss them in with salad veggies, mix them with whole wheat pasta, or alone with sides...they make a quick protein fix after a busy day...

Best Ever Chicken Parmigiano

No breading, frying or mozzerella is used in this version of chicken parm. The fabulosity of the dish is contingent on using organic chicken, organic tomato paste (which is much sweeter and cooks faster than conventional paste) and imported, sharp Provolone, which should be grated by you...trust me, there's a big difference in a good quality imported Provolone (such as Auricchio) and domestic, cheap brands...

Shrimp & Lobster Salad

This salad has been adapted from a dish my mom made for us as kids...it was one of our favorites, and I make it often in the summer when lobster prices are $5.99/lb...ahhh, lobster...my favorite food! The prep sounds labor intensive, but if you're a lobster lover, it doesn't matter...

Eggplant Caponata (Spicy)

I use only organic veggies in this dish, except for the pepperoncini, which are imported from Italy...I buy ones that don't have artificial color added. This recipe is great hot, cold or at room temp...great for any meal of the day!

An Italian classic, with a twist...

Barley Stuffed Peppers with Mushrooms and Rabe

Barley, broccoli rabe and mushrooms replace the traditional rice and peas in this recipe. Spinach, escarole or kale can replace the rabe...quinoa, bulgar or orzo can replace the barley...makes a fabulous side dish for lunch or dinner. Filling makes a great substitute for risotto.

Asparagus di Romano

Imported Romano cheese is made from sheep's milk, and is very low in lactose, which is true of other hard cheeses. I always use Locatelli...it's high quality, and can be easily obtained in supermarkets...Cauliflower also works well in this style...

Scampi with Tuscan Peppers

This dish is SO easy and fast to prepare...I use elephant garlic in place of regular, as it's sweeter and lends itself well to the dish...the olive oil may seem like alot, but like most Italians, I coat the bottom of the pan with olive oil when cooking...enjoy!

Sassy Sweet Potatoes

I satisfy my sweet tooth with this dish...it doesn't have any added sweeteners and supplies savory, sweet, and spicy flavor profiles; the spices and amount of olive oil can be varied to your taste, sometimes I also add ginger and apples...it's like Thanksgiving anytime!

Garbanzo Salad

You can tweak this recipe to include any veggie/bean combination that you choose. I prefer dry beans to canned...they have way too much sodium and a softer texture than dry. Measurements are approximate as I usually cook by sight and instinct. I always have this salad in my fridge for quick, high protein meals.
