Saw this on food52 website. It is relatively healthy and good for dinner or brunch.
Tomato jam (serving ~1 Tbsp)
Use on bruschetta, pasta, as a drizzle over fish or chicken--for whatever you like
Barefoot Contessa Panzanella
Delicious garlic vinaigrette dressing over fresh veggies and bread cubes. (I reduced oil on bread cubes to 2 Tbsp and eliminated capers)
