This meat can be used for Mexican dishes, but would make a great sandwich too! I modified this recipe from Campbell's Incredibly Easy Recipes Cookbook, which called for pre-packaged bbq pork and mixing in salsa. I wanted a lower sodium, less processed option.
This was my grandmother's recipe. I added the cardamom. It's healthier than what you can buy, but could be made even more so by substituting half the flour with wheat flour, 1/4 C applesauce for the oil, two egg whites for the egg and splenda for the sugar. These are so good though, I sometimes think my family lets bananas get overripe just so I'll make them.
I love Shepherd's Pie in the winter, but this winter was so warm, I made it with vegetables from the farmer's market
I put this together for lunch when I got home late and was really hungry, but didn't want to binge. It consisted of what I could find in the fridge, freezer and pantry. This makes 2 servings, so I have something to heat up quick later.
this seasoning is great for meats and vegetables, the recipe originally came from a 1700's Hungarian Cookbook, but I changed the type of pepper - the original called for 1 tsp of ground black pepper and 1/4 tsp ground white pepper and I use sea salt instead of regular salt
