Pan fried chicken thighs

This is one of my husbands favorite. No leftovers here.

Mushroom-Herb Chicken

Found this on myrecipes.com. It is another great way to serve chicken breasts. Ready quickly too.

Balsamic Chicken with Roasted Tomatoes

Found this on myrecipes.com and had to try it. We all loved it very much. My picky daughter went back for seconds.

Adapted Chicken Alfredo

My Family loves this meal. I adapted it from Fix It and Forget It page 37. I use a lighter alfredo sauce, added some vegetables and used Smart Taste Pasta.

Yummy Meatloaf

I made this for my family in the crockpot but it would be easy to adapt to the oven I based this on two different recipes. Momma's Meatloaf and one from page 37 in Fix it and forget it.

Adapted Nine Day Coleslaw

This recipe came from a Weight Watcher meeting. I added the carrots and put more onion in it. It is low in calorie and tasty. The best part is it is good for nine days but it probably won't last that long. It is not a creamy coleslaw. It does need to sit overnight for full flavor.

Sloppy Joes

My family enjoys this recipe. It has lots of vegetables, no added fat, and lots of flavor.

Mushroom Chicken in Sour Cream Sauce

This recipe was adapted from Fix It and Forget It for Entertaining by Phyllis Pellman Good and Dawn J. Ranck. I have lightened the recipe and added fresh onion and garlic

Easy Hamburger Stroganoff

This recipe was quite easy and quick. We served it over noodles and added green beans for a vegetable. Everyone was was happy.

Crockpot Hot Beef for Sandwiches

I found a basic recipe in a cookbook and added several ingredients to make it my own. We enjoy this very much. I do make sure to trim the roast very carefully

Mom's Tuna Salad

This is a recipe from my childhood. My mother made tuna this way.

Mild Turkey Taco Meat

My family does not like a lot of hot spice in their food. The cumin and the oregano give the meat that taco flavor without the heat. This is fairly lowfat. You can always add heat to it if you wish. It also gets away from those packets of additives that we buy for flavor.
