I have made somewhat the same for a while. Be carefull when you cut the perppers--use plastic glovesI I boil the cut peppers in water that has a teasp.. of sugar ( so they stay nice and green. only for about 1-2 min. drain well.
We use the cream cheese but add some grated low fat Jalapeno

I make these all the time, but I stuff the peppers with a mixture of lowfat creamcheese and shredded cheddar cheese. They're phenomenal! I also use at least 1/2 a slice of turkey bacon because 1/3 won't wrap all the way around. Submitted by:
