I've made something very similar to this. EVERYONE in my family diabetic or non, did LOVE these.
8oz cream cheese
2 Tbl spoons butter
4 Lg eggs
2 Tbsp Almond Meal
1/4 tsp salt
1tsp cinnamon
4 packets of Splenda or something comparable (more if you like sweeter)
1-1-1/2 tsp Vanilla Extract

Sorry, I didn't like these at all. It just tasted like eating sweetened scrambled eggs to me- very eggy tasting. I was hoping for a low-carb pancake sub but this didn't do it for me as I hate eggs! Submitted by:

These were incredible. Didn't have eggs, just egg beaters and ended up putting everything in one bowl and beating. 4 splenda was perfect. I did use 3 more tbsp of flax meal. ****But adding up the carbs myself, it came to 4.8 total carbs. 4 oz cream cheese = 4 carb, 2 eggs =.8. Track Accurate. Submitted by:

Am I missing something?? There is no measurement to go by with regards to the amount of Splenda or salt!! So I put 1/2 tsp of salt and a Tbls Splenda. This recipe yielded 4( NOT 10) little salty, nasty "pancakes" and a lot of dishes. How were the rest of you ending up with something tasty? Submitted by:

These are good, but I found that they were REALLY salty. Will make them again, but may try with regular cream cheese instead of light... Submitted by:

and if cooked in butter, this is not in calorie count, I would use PAM spray and are the yolks necessary? Submitted by:

These are very delicious! Thanks for the recipe. But I am confused on the carb count. If 4oz of cream cheese and 2 eggs are used, shouldn't the total carb count be at least 6 not 4? Submitted by:

It reminded me of a crepe....sort of hard to fry, but I would try them again. So much fat in them though...will only be a treat Submitted by:
