Yum, this is one of my favorites, in the summer I saute yellow or green squash or both with onion, garlic and red or green peppers with salt, pepper and oregano. My son sprinkled Parmesan cheese on top. This is a keeper. I have also taken Zucchini and sauted it with onion and added Reduced fat cheese, then sprinkled crushed reduced fat Ritz on top for my other son that doesn't like tomatoes. Yum! Submitted by:

my mom has always made something very similar to this. . but she adds Italian seasoning to it.. also green peppers.. or any color peppers.. but.. ( she adds the small cut round pepperoni!) delicious!then at the very end, she tops it off with low fat mozzarella cheese, just til it melts! just a bit! Submitted by:
