I made this for Christmas. Everyone like it. Reduced calories further substitutions I made. Cake part: powdered egg whites, S/F pistachio instant pudding. Frosting: S/F pistachio instant pudding , milk-skimmed, cool whip-lite. Both cake mixture & frosting added 1/2 tsp. pistachio flavoring. Submitted by:

You can take a regular box cake mix and add a can of pumpkin to it. It tastes great and you get fiber from the pumpkin. Submitted by:

I actually haven't made this yet, but am looking forward to it. I will probably replace oil with flaxseed to increase my omega-3 and fiber intake. Read label of flaxseed package, should tell you how much to use to replace oil. Submitted by:
