Nutrition & Calorie Comments  

I used salsa instead of tomatoes and low-fat colby jack for the cheddar cheese. This is very good as a meatless recipe when you add drained black, pinto or kidney beans. I also omitted the egg in this version. I'm lazy, so I just halve the corn tortillas. It's a very good, versatile recipe. Submitted by:
